Quick and Easy Salmon

Tomato and Mushroom Salmon with Mixed Brown Rice and Quinoa.

Here is a quick way I made salmon the other day. You can replace the recipe with any kind of fish. I take it right out of the freezer and straight to the pan. Super quick meal on a lazy day.

Ingredients:
2 salmon filets
2 tablespoons Lawry's Basil, Lemon and Garlic Rub
1 tomato chopped
1 cup chopped mushrooms

Garnish with green onions whole basil leaves or torn leaves

Directions:

Place filet in pan on med-low heat. Sprinkle 1 tablespoon Lawry's Seasoning on top. Top the fish with tomato and mushrooms and the last tablespoon of Lawry's Season. Place lid on and let cook for about 10 minutes. Take lid off and turn to high heat. Let water evaporate and fish brown on bottom. I served mined with some brown rice mixed with quinoa I had leftover. Garnish with basil.

Remember always adjust seasoning to your taste and cook meat to the tenderness you like ;)
