Vietnamese Noodle Salad

Here is one of my favorite Vietnamese noodle salads. They normally make it with a vermicelli noodle but I made mine with a mung bean and potato noodle. I put a small iceberg salad, Vietnamese pork loaf(cha lua), egg rolls and shredded carrots, mint, green onions and cilantro to top it off. If you love herbs you will really love this dish.

Ingredients:
Noodles (I used bean thread but any kind of white noodle I love from the asian market).
Vietnamese pork loaf ( if you can't get this you can use bbq meat)
Cooked eggrolls (you can cook these before so they are ready)
Iceberg lettuce, shredded
Shredded carrots
Mint
Cilantro
Green onions

Sauce:Nuoc Cham
3 tbsp lime juice
2-4 tbsp sugar
1/2 cup water
2 1/2 tbsp fish sauce
Shredded carrots
1 glove mince garlic
A few slices thai or jalapeno peppers

All you do is boil the noodles and then drain. After, you just set up your plate like the picture below. You can also put it in a bowl and layer with the sauce on the side.

For the sauce: Mix first 4 ingredients together well. Sprinkle in the last three ingredients.


Try and use some chopsticks ;)
