Healthy Raw Food Prep

Here is my healthy food prep of the week. I prep every few days because I don't like eating the same thing for a whole week. It can get pretty boring that way. So I tend to go to the grocery shop a couple times a week and just pick a few new veggies and a different type of protein. I am not a vegetarian but I do try and cook as many meals with no meat as possible. I love meatless Mondays but I do think a few more vegetarian meals should be incorporated to a diet per week. Here I made a kale salad with sliced tomatoes, sliced red onions and chopped cilantro. Herbs are a key ingredient for me because they add flavor without the fat. I cut up some lemons and limes because I love some fresh squeezed juice on my salads and foods. I also made a mixture of walnuts, cranberries and hemp seeds for some added protein.
For my fruit I cut up some watermelon, strawberries and apples. If you don't want the apples to brown you can rinse them in salt water. My kids love having cut up fruit. The three of them will eat the whole container below in one day so I'll cut extra and place in a separate container to refill.

Here is a salad I made with the food I prepped. 
I also added some beans on top for extra protein. For my dressing I used a chipotle spread you might have read me rave about in my previous post Chipotle White Bean Tacos.
