1 tomato chopped
1/4 red onion chopped
6 fresh basil leaves chopped or torn
2 tablespoons extra virgin olive oil

Mix all ingredients together. Salt and Pepper to your taste.

I served mine on top of some garlic bread and on a pre made herb salad with balsamic glaze.

For really great garlic bread I use about a whole head of garlic for one baguette of bread. Mince garlic until it's somewhat of a paste. Spread the butter and garlic paste on the bread and sprinkle with dried basil or italian seasoning. Bake until toasty!

Super fast and healthy meal just don't eat too much bread ;)
