Shrimp Cocktail

My husband brought me home fresh caught shrimp again and these guys were huge!  I made some  Latin inspired shrimp cocktail and it was so tasty!

Ingredients:
1 lb shrimp
1 lg tomato
1/2 onion
1/2 bunch cilantro
1 jalapeno or serrano pepper
1/2 cucumber
6 limes
Ketchup!

Cut shrimp in to small pieces. To cook them  you can either cover them in lime juice or boil them in water.

Dice the rest of ingredients and add it to the shrimp.Mix well. 

Add ketchup to your taste. This just depends on how thick and sweet your would like it. 

Serve on a red cabbage leaf with tortilla chips or crackers on the side. 

Avocado cubes are really good in this also.

Tips: If you soak the shrimp in lime make sure you cut it as small as you can in order for the lime to cover the shrimp as much as possible. Technically it's not really cooked unless it's heated so make sure you have fresh shrimp you know isn't contaminated. 

Whenever making a type of salsa make sure you cut the pieces small. You want all the flavors in one bite.
