Lucuma Recipes and Benefits

If you haven't tried Lucuma I highly recommend it. The taste is amazing. It has a creamy maple flavor to it and when paired with real maple syrup or brown sugar it enhances the flavors even more. Being a natural sweetner you don't need much added bad sugars which is a big plus.
 This amazing fruit originates from the Peruvian Andes. It is a very common ice cream flavor for the locals. This Incan Superfood is also very good for you. It's high in antioxidants, full in minerals and vitamins, beta-carotene, iron, calcium, zinc, B3 and protein.  It's prepared by dehydrating the fruit then grinding it into powder.  If your lucky enough you can get the fruit fresh.  California is known to have successfully grown them. I think I will try to grow them here. Wish me luck!
There are many ways to prepare this amazing fruit. You can add it to yogurt, cereals, smoothies, muffins, cakes, oatmeal, pancakes. The list can go on.
I posted below a couple recipes I use with Lucuma. My favorite brand of superfoods are Navitas Natural. They are the less pricy organic brand. You can purchase the Lucuma Powder here.

Raw Lucuma Oatmeal 

1 cup Old Fashion Oatmeal
2 cup milk ( I used Blue Diamond Almond Coconut Blend)
1 tablespoon Lucuma
1 tsp brown sugar
1 tablespoon slivered almonds
1/2 cup peaches
Lemon Basil for garnish, this is not just for looks either. It taste amazing with it.

Add all ingredients in a container and mix well. Let sit for about 6 hours. I can eat it right away but if you like it soaked like cooked oats, let it sit.

Lucuma Pancakes

Get your favorite Pancake Mix or recipe and add these to it.

2-4 tablespoons Lucuma, depending on how creamy you want it
2-4 tablespoons brown sugar
Fruit toppping of your choice
