Sweet Potato Spring Rolls with Ponzu Sauce

Here is another great spring roll recipe.

Cooked Quinoa
Steamed or boiled sweet potato julienne
Raw zucchini julienne
Sauce: equal parts
Soy sauce
Rice wine vinegar (can also use limes)
Siracha hot sauce to your taste

I get all the ingredients prepared and place them on a plate shown below.
Get a piece of rice paper and wet both sides shaking excess water off. Place on a plate and add ingredients inside. This all depends on what your taste is. I like a lot of cilantro. Roll the rice paper when it becomes soft. When your half way rolling fold the sides in then roll to the end. The rice is a little sticky so it helps keep it together. Dip in some sauce. Healthy and tasty!
