Carne Asada

I am all about quick meals. My three boys exhaust me on the regular. To get all the things I want done in a day I need quick tasty meals. Here is another 20 minute meal.

I get carne asada cut up already. You can also get any kind of steak. Buying it cut up helps with time. Cutting up a bunch then separating it in different bags and freezing it also helps me through out the month.

Ingredients:
1/2 pound carne asada or steak, cut up
1 tablespoon taco seasoning
1 juice lime
1/2 tablespoon crushed coriander

Place all ingredients in a pan on high. Mix together everything so all the ingredients are incorporated. Cook until the meat is cooked through about 5 minutes, mixing every once in a while. I let the meat brown at the end when I am ready to take it off the stove for some color.

While meat is cooking, I prepare all the toppings first then start cooking the tortillas

My husband also made me this egg white omelette the next morning with the leftovers.

These tortillas are so good. When I am cooking them in the pan it smells like I am on Mexico! They taste so much better then already cook ones and there are no preservatives.
