Chipotle White Bean Tacos




I made these Chipotle White Bean Tacos a couple days ago and oh my were they sooooo good! I found the chipotle sandwhich spread at my local grocery store that is to die for! I was originally looking for dressing but only found the spread and it ended up tasting amazing and is ALSO low in calories. Win Win situation for me :) One tablespoon only has 25 calories. I ate the whole jar I think in 2 weeks. Not only did I use it for the tacos but I also used it for veggie dip, salad dressing and on top of fish. If you want more of a creamy low fat dressing you can add non-fat plain greek yogurt or water equal portions. This cuts down the spiciness also. I did this most of the time because it is super thick, so for a dressing it would toss better in my salads. Hope you all try it, you will love it!

What you'l Need:

Hidden Valley Spicy Chipotle Sandwhich Spread mixed with equal parts sour cream
Corn Tortillas
1 bag dried white Beans
Garlic salt
Chopped Tomatoes
Chopped onions
Chopped Cilantro
Limes Wedges
Salt and Pepper to taste
Mexican Hot sauce if you prefer

Put Beans in crock pot with water. The bag will tell you how much water to add. I cook mine for 8-10 hours on high heat. They always come out perfectly soft and not broken.The key to perfect beans is a longer low cook time, if your heat is too high they will break apart. I add garlic powder, just enough to spinkle over the whole top. Fresh garlic and half an onion would be great also. Once beans are done warm up tortillas and place in a tortilla warmer so they don't get cold. Place a large spoonful of beans on a warm tortilla and add toppings to your desired taste. I am telling you the chipotle sauce is so good. I am going out to buy another tomorrow because it's gone!


Here is the brand crock pot I used. Mine is digital but I am sure this one is great also. I love this tortilla warmer, isn't it such a unique design. I also found some trays you could serve more of the chipotle sauce incase your guest would like extra. Rachael Rays kitchen sets are so vibrant I love them. Also the spice set has an amazing look and would add great color to my kitchen.
