Birthday Cake Oreo Cupcakes

A child's favorite cupcake! With all those sprinkles any childs eyes would light up.

Now I am all about health food but I do believe you should indulge sometimes. Life wouldn't be right without a little treat!  As long as the majority of your food,about 80 to 90 % of the time is healthy then that is great!

When my family was here my niece and I wanted to make oreo cupcakes. We went to buy some oreos and saw the birthday cake ones, I never had seen them yet and I thought the kids would love that! So instead of just the original oreo we had the colorful sprinkle ones and to top it off we added sprinkles the the cupcake batter to make it extra special and sugary!

Here is the recipe.

INGREDIENTS:

Batter:
24 Oreo halves, with cream filling attached
2¼ cups all-purpose flour
1 tsp. baking powder
½ tsp. salt
8 tbsp. unsalted butter, at room temperature
1 cup brown sugar
2 large egg
2 tsp. vanilla extract
1 cup milk

1 cup sour cream

20 Oreo cookies chopped
1/3 sprinkles

Frosting:
8 oz. cream cheese, at room temperature
6 tbsp. unsalted butter, at room temperature
1 tbsp. vanilla extract
1/3 cup flour
4 cups confectioners' sugar, sifted
2 tbsp. heavy cream or milk
24 mini oreo cookies
Rainbow sprinkles

Preheat oven to 350 degress. Line cupcake pan with liners and place oreo halves with cream center face up in liners. Add sprinkles on top of oreos. Add flour, baking powder and salt together. In separate bowl cream butter and sugar together til fluffy. Add eggs and vanilla extract. Alternate mixing in the milk and dry ingredients. Never overmix. If anything you want to under mix. This will make a more fluffy cupcake. Mix in sour cream. Fold in chopped oreos and sprinkles. Divide batter between cupcake liners you already prepared. Bake 15 minutes or until a you can poke the cupcake with a toothpick and it comes out clean. Let cool and begin to frost.

For the frosting. Add cream cheese and butter together. Mix well. Add vanilla extract then flour and sugar. Add milk. Refrigerate until cupcakes are cooled. You can make this ahead of time. When the frosting is cooled it handles much better and I prefer the consistency cooled much more.

Sprinkle the cupcakes and top with a mini oreo!
