White Lasagna Rolls

This is full of calories but well worth it! Not your diet type of food ;)
The famous Lasagna Rolls pinning away on Pinterest. I ended making some with alfredo sauce and some with marinara sauce. Instead of using spinach I used kale. Everyone in my family loved it. Both sauces came out really great. This is an easy meal also.

Ingredients:
Alfredo Sauce 1 jar
1 package Lasagna Noodles (18 noodles)
3 cups kale
2 eggs
20 ounce ricotta cheese
1/4 breadcrumbs
2-3 garlic cloves minced
Few sprigs basil leaves chopped
Extra Virgin Olive Oil
Mozzarella or Parmasan cheese is optional
Salt and Pepper

Directions:
Boil noodles until soft.  Add some extra virgin olive oil to the water so the noodles don't stick. Drain.
Boil or steam kale until wilted
Mix kale, eggs, ricotta cheese, breadcrumbs, garlic, half of basil and cheese in a bowl.
Lay out noodles and add mixture in the middle. Roll the noodle with the mixture and place in a oven dish brushed with olive oil.
Pour half alfredo sauce on top.
Cook at 375 degrees for 20 minutes.
Serve with more alfredo sauce and top with fresh basil.
