Strawberry Peach Crumble

My husband requested his favorite dessert for Father's Day, Crumble! This is also my favorite dessert and it is a super easy one. Anyone can make this even if you are not a baker :) The inside is a thick sweet fruit filling with a crunchy oat topping. Sooo good you will have to try!
Filling
4 cups your choice fruit (I used fresh strawberries and peaches, you can use frozen also)
1/2 cup brown sugar
1/2 orange juice ( any juice of your choice is good also)
2 tablespoons cornstarch
1/2 table3spoon real vanilla extract
Cinnamon or nutmeg (optional)
Mix together and place in oven dish
Topping
2 cups old fashion oatmeal
1 1/2 cups brown sugar
1 cup flour
1/3 cup flaxseed
Handful Almonds or your choice of nuts
1 tablespoon real vanilla extract
1 1/2 sticks cold butter cut up in chunks
Mix first 5 ingredients together then add vanilla extract. Mix in butter until topping looks like crumbles. Place on top of fruit mixture. Bake at 350 degrees until brown. Serve with vanilla ice cream.
I added more vanilla extract then most people so if you don't like too much you can add half. Also you can use half white sugar but I prefer brown.
This dish also looks beautiful when you use dark berries in a white dish.
