Randoms Eats Lately

Some food from recently. I can't not say how important it is to eat fermented foods! Your gut is the most important part of your body! Here is a post I wrote about fermented foods a few weeks back on my Instagram.

Did you know that most countries consume 5% to 40% of fermented foods in their diet everyday. This is slowly decreasing because of the Western Diet that consist of food high in animal fat. Fermented foods from drinks,vegetables, beans, tempeh to wine have amazing nutrients for the digestive tract. This ancient preparation and preservation gives beneficial enzymes and different strands of probiotics healing your gut. Your gut is the biggest component of your immune system and is where 95% of the absorption and nutrients take place. When your digestive tract is healthy your immune system will be healthy thus fighting off infection.If you have any stomach problems fermented foods are therapeutic and healing for the body. It is so easy to make fermented vegetables at home and it is a really cheap food. It is very important to make it at home because a jar in the super market has been pasteurized and heated killing all the beneficial nutrients leaving it pointless to consume. You are what you eat.

Pickled soy sprouts


Baked sweet potato with quinoa and white rice, sauerkraut, green beans, lima beans and green fungus mushrooms.


This plate doesn't have any fermented foods but I always eat some with one meal a day.

Curry Vegetables with Salmon and Sweet Potato Mash

I love sweet potatoes. I really love them fried but they are really bad for you to eat on a consistent basis so I make mashed sweet potatoes. I put some fresh sauteed garlic and coconut milk to make them creamy. I would have these any day over regular potatoes. I made them this morning with some stir fried vegetable curry.
Curry is also another amazing health food I can never get enough of. I stir fried vegetables with some coconut oil, garlic,ginger,curry powder,fish sauce and basil oil. Getting a good grade curry is so important. When I go to the regular store and get curry powder I always have to use tons of the powder.The curry powder I use is from either a Asian store or Indian store. I literally use half a tablespoon and that is it. I posted a  picture below of a good quality curry powder.




Curry vegetables
4 cups vegetables
1 cup cherry tomatoes
4 tablespoons coconut oil
4 gloves garlic minced
2 tablespoons ginger minced
1/2 tablespoon curry powder
Fish sauce to taste, about 1/2 tablespoon.Salt is a good substitute
Pepper to taste
Heat pan on medium heat.Add coconut oil. When the coconut oil is hot add the ginger and garlic. Add the vegetables and stir well. Cook vegetables through. If your using tomatoes you can throw those in after you turn off the pan. Cover it and let sit a few minutes. The tomatoes will cook perfectly. You don't want them breaking open. Add fish sauce or salt and pepper to taste.

Sweet Potato Mash
2 sweet potatoes
4 tablespoons coconut milk
1/2 teaspoon sauteed garlic

Boil sweet potatoes til soft. Rinse water out then mashed til creamy. Add coconut milk and garlic. Mix well for a more creamy texture.

Healthy Eating

Hope everyone is having a great Friday and yay for the weekend! I have been so busy with the kids after school activities,doctors appointments,laundry,cooking,yoga,taking care of the dogs, cleaning the house(I know story of our lives,right!) I have been eating junk food lately and not that it's a bad thing I actually think it's great to indulge once in a while maybe even a few times a week. Ultimately I always try to eat healthy because it really makes me feel energized. If I start eating junk food on a regular basis I will feel groggy in the morning and it just sucks trying to get up. When I started eating REALLY healthy a few years back I never wanted to get back in eating bad food regularly because it's just not worth it to feel tired all day long, drinking coffee after coffee and taking care of three boys. I know a lot of mother's feel like this and I promise you if you change your eating habits it is so worth it!
I posted a sauerkraut recipe a few weeks ago you can see here. I made another batch with purple cabbage that came out amazing. I let this one sit longer, about four days and oooohh was it so good. I made a salmon steak the other night with some quinoa,steamed vegetables,sauerkraut on the side and some fresh basil and cilantro on top. This was so good and the only seasoning I used was the Himalayan Salt from the sauerkraut and olive oil from the salmon. I ate half this and saved the rest for another meal.

Raw Pineapple Coconut Oatmeal

I love raw oatmeal. I like making it in the morning because I like it with a little texture. Right when I get up I make it and let it sit for a couple hours. If you don't have time or like it more soft you can make it the night before. Raw food is always the best for you. Anything that isn't cooked above 120 degrees won't loose it's nutrients from the heat. If there is any food you don't have to cook or like raw I encourage you to eat it raw and fresh.
These pineapple I got are amazing. They are so sweet. I think they might be from Florida. They make me feel like I am in the tropics even with the snow here!



Ingredients:
1 cup Oatmeal
Unsweetened Coconut Milk, just enought to cover oatmeal
Pineapple
Strawberries
Chia Seeds
Raw Cocoa
Coconut Flakes
Bee Pollen
Raw Honey

Place oatmeal in container with a teaspoon of chia seeds. Cover with coconut milk. Let sit at least a 2 hours. Top with rest of ingredients. Drizzle honey on top.

It's that easy!

Pesto Tofu Salad

Healthy Food is fast food. When I prep food for a few days it is so easy is just throw a salad together. I'll wash and cut all my vegetables and fruit, you can see how I food prep HERE. My kids and husband love just going into the fridge and being able to grab pre cut fruit or vegetables. One of the reasons I think it's so easy to eat junk is because it is so easy to grab and eat. Chips are right there ready to go. If fruits and vegetables are right there ready to go it's a lot easy for us to eat healthy. A salad I put together in 5 minutes with the help of food prepping!

                              Pesto Tofu

Plain cut up tofu tossed with pre-made pesto from the grocery store. Lemon juice on top makes it really good. This is very healthy and the pesto make it taste amazing. Healthy food is good!

Berry Bowl

First I wanted to say, sorry if you have tried to subscribe to my blog by email. Someone recently emailed me and said it didn't work. I will get it fixed ASAP.

I wanted to share my berry bowl I posted on instagram (@mermaidsblog) the other day. Normally people use acai berries. I used blueberries and strawberries for this one. I think people tend to forget that traditional fruits have so many beneficial nutrients. I don't have to buy a tropical fruit imported from a different country to get the nutrients I need. I do love the taste of acai berries and switch it up once in a while.

For the bowl I got frozen blueberries and strawberries and blended it with coconut water. I then topped it with coconut flakes,hemp seeds,banana,strawberries with cacao, Chia seeds and bee pollen. I love fruit bowls because they can be topped with anything from nuts to granola to superfoods to fruits. The list can go on. This is absolutely the healthiest you can get and taste amazing.

Curry Turkey Bowl

I am big on quick dinners. When my kids get home from school it's homework, dinner then 6pm is getting ready for bed. I feel like there is no time for them to play.I made a quick healthy recipe of curry turkey the other night.

 I posted a picture of my kids plate on instagram a couple days ago you may have seen.My rice cooker is a life saver. I put white rice and quinoa together in the cooker and one button and it's done. The turkey I sauteed with a couple gloves of garlic and some oil with a small spoonful of curry. I add a little soy sauce also. Soy sauce is like salt with a different flavor. I add it on my family's plate to their tastings. I served it with a frozen stir fry mix from Costco that can just be heated up. The turkey takes 10 minutes to make. Just make sure you put the rice cooker on about 30 minutes before.

The kids plate. Rice balls are great for no mess. Taking the time to clean rice off the floor, the chairs and their clothes is so tedious! 

I like curry from the Oriental stores. It has stronger flavor, taste better.
