Raw Pineapple Coconut Oatmeal

I love raw oatmeal. I like making it in the morning because I like it with a little texture. Right when I get up I make it and let it sit for a couple hours. If you don't have time or like it more soft you can make it the night before. Raw food is always the best for you. Anything that isn't cooked above 120 degrees won't loose it's nutrients from the heat. If there is any food you don't have to cook or like raw I encourage you to eat it raw and fresh.
These pineapple I got are amazing. They are so sweet. I think they might be from Florida. They make me feel like I am in the tropics even with the snow here!



Ingredients:
1 cup Oatmeal
Unsweetened Coconut Milk, just enought to cover oatmeal
Pineapple
Strawberries
Chia Seeds
Raw Cocoa
Coconut Flakes
Bee Pollen
Raw Honey

Place oatmeal in container with a teaspoon of chia seeds. Cover with coconut milk. Let sit at least a 2 hours. Top with rest of ingredients. Drizzle honey on top.

It's that easy!

Berry Bowl

First I wanted to say, sorry if you have tried to subscribe to my blog by email. Someone recently emailed me and said it didn't work. I will get it fixed ASAP.

I wanted to share my berry bowl I posted on instagram (@mermaidsblog) the other day. Normally people use acai berries. I used blueberries and strawberries for this one. I think people tend to forget that traditional fruits have so many beneficial nutrients. I don't have to buy a tropical fruit imported from a different country to get the nutrients I need. I do love the taste of acai berries and switch it up once in a while.

For the bowl I got frozen blueberries and strawberries and blended it with coconut water. I then topped it with coconut flakes,hemp seeds,banana,strawberries with cacao, Chia seeds and bee pollen. I love fruit bowls because they can be topped with anything from nuts to granola to superfoods to fruits. The list can go on. This is absolutely the healthiest you can get and taste amazing.

Coconut Almond Chia Oatmeal

Here is another chia pudding recipe that is sooooo good. I first tried canned coconut but that has a lot of fat so I subtituted it for Blue Diamond half coconut/almond Milk blend. It came out great. Chia is so good for you. Make sure to always let it absorb in a liquid to get the most nutrients out of it!
If you don't want oatmeal you can skip it and add another 1-2 more tablespoons of chia seeds.

Entire recipe is only 344 calories (if you add sweetener it will be more)
2 tablespoons chia seeds
1/3 cup old fashion oatmeal
2 cups Blue Diamond half coconut/almond milk unsweetened
1/2 fruit
Agave or honey to taste
Shredded coconut (optional)
Mix together and let sit over night. Another easy recipe.

Coconut Ceviche

My ultimate favorite food, ceviche! I really love making it now because in NC fishing is amazing. Many people will have there kiosk on the sides of the road with their fresh shrimp or whatever they caught from that morning. It's aaaamazing ;)

1 cup cevice, 12 Mission Tortilla chips and 1/4 avocado equals 316 calories.

Recipe
2 lbs shrimp cut up in small piece's. You can keep whole if you like
6-10 limes
1-2 large tomatoes diced(I used 1red and 1 green)
1/2 onion diced
1/4 cilantro bunch diced
1-5 serrano peppers diced
1/4 brown coconut shredded

  There are two ways you can make this. If you want to make it the raw way put the shrimp im a large bowl and cover with lime juice. The juice will cook the shrimp and it will turn color when it's done. Depending on the acidity of the limes it can cook in ten minutes or an hour. If you don't want it raw just boil the shrimp.
   When the shrimp is done mix in the rest of the ingredients.
  Serve with chips or on a tostada with some sliced avocado and a lime wedge. Valentina hot sauce also if you have a super spicy taste like me.
  If your on an diet you can eat it with sliced cucumbers or have just one serving of chips.

Tips: when picking out limes always get the ones that have a smooth rind. You don't want ones with pores showing as they don't have any lime juice.
   Cutting a coconut. Poke the mouth and drain the water. I get the back of a meat cleaver and hit the coconut right in the middle all around the coconut. It should open it up right through the middle. To get the meat out, get a knife and slip it under the meat and the shell. Then cut from the middle to the edge of the meat. I hit the outside with the cleaver again to loosen it up.
  Don't substitute serrano peppers for jalapenos. It doesn't taste as good.
   Ceviche is also really good with a mixed seafood, fish, octopus and squid. Hope you try it out
