Turkey Tostadas and Peach Wine Spritzer

My family and I loooove Mexican food. Growing up in Southern California probably had a lot to do with all the Mexican food I have known to love. I make Mexican at least once a week whether it is quick quesadillas, tacos, tostadas or ceviche. The list can go on. I made some turkey tostadas last week that came out great. This is one of my quick dinners that always come out satisfying to my family.

Ingredients:
Ground Turkey
Taco Seasoning
Corn Tortillas(corn is always better then flour as it is just ground up corn and water)
Beans (I used black, I cook them in crockpot for 6 hours on high)
Shredded Lettuce
Guacamole or sliced Avocado(I mash my avo and add a little garlic salt and lime)
Sour Cream Or Plain Greek Yogurt
Fresh Salsa(I chop tomatoes, cilantro and green onions and a little lime juice and garlic salt)
Serrano Peppers if you like some heat

I brown some lean turkey (I always try to shoot for 90%) and use more spices then flavor with fat. It is an easy way to cut down on high cholesterol foods. After it is brown I just sprikle some taco seasoning and mix. Cook til it is done.
For the tostadas you can buy pre made. I used soft tortillas and put them in the oven at 350 degrees. They brown quick so watch them!
Layer beans on top of tostadas, meat, lettuce, salsa, sour cream, guacamole and peppers. Time to eat!

TIME TO WINE!
I paired my turkey tostdas with a Peach Moscato Spritzer. Instead of ordinary club soda added to the wine I added a Smirnoff Peach Bellinni. Moscato is made with Peach so when mixing it with the Peach Bellini it pairs very well. Moscato is normally a dessert wine but is paired well with turkey and spicy foods. The turkey on the tostados and spicy serranos I put on top paired well with the Moscato.

I made this a few days ago and as I am writing this I want to make more.

If your trying to loose weight I would recommend using some romaine lettuce to replace the tostadas or you can control your portion and eat one tostada.

Laugh and Love
