I love making curry because I pretty much just throw whatever I have in the kitchen in a pot, add some coconut milk to cover vegetables, etc, curry powder, fish sauce or salt and let simmer. It is easy and very good for you. Curry powder is made mostly from tumeric which has amazing healthy benefits which include:

- Help or treat cancer
- Preventing and Treating Alzheimer's Disease
- Helps with depression
- Diabetes Control
- Improves Digestion

As you can see it has a great effect on your overall health. I definitely recommend adding it to your diet on a regular basis! ;)
The curry ingredients I used were:
1 can Chic Peas (great replacment for meat)
1 lg Zucchini
5 Small onions
1 Acorn squash
1 Red Bell Peppers
6 Cherry Tomatoes
1 Sm Russet Potato
1 Serrano Pepper
4-10 tablespoons curry powder
Fish Sauce or Salt to taste
Blue Diamond Unsweetened Coconut Milk
Toppings:
Bean Sprouts
Mint
Basil
Sliced Serrano Peppers
Add all ingredients in pot except tomatoes and fish sauce. Cover with coconut milk. Add curry powder. Stir well. Cook until vegetables are tender then add tomatoes. Cook about 3 to 5 minutes. Add fish sauce or salt to taste. Garnish with bean sprouts and herbs.
Tips: I like my curry very spicy. For less spjce use less powder. You can always add more. The serrano pepper is optional also if you don't want it so spicy. I like the flavor of the pepper so you can always take the seeds out to cut the spiciness.
