My friend Alison came over and we made this yummy dish. She made the base and I added the extra tomatoes and herbs. This is a great dish because you could add any veggies you have in the fridge. Anything would be tasty.
1 can garbanzo beans drained
1 cup broccoli florets
3/4 cucumber chopped
1 cup shredded carrots
1/2 bell pepper chopped
3 sm tomatoes chopped
1 tablespoon dijon mustard
Italian dressing
4 cups cooked quinoa cooled
Shredded Basil and parsley garnish
Servings: 5 Calories: 381
Mix first 7 ingredients together. Coat with Italian dressing.(about 5 tablespoons) Add quinoa with mix right before eating. Garnish with basil and parsley.
