Vietnamese Spring Rolls

My mom has been visiting for the last 2 weeks with us. She is the best cook ever and has been cooking up all the Vietnamese food I LOVE! She sadly went back to California last night but left me some tasty spring rolls. Thankyou to my aunt for making the tofu and pork! Recipe is below. You can either eat these with peanut sauce or nuoc cham. They are both really tasty. xoxo


What you need

Shredded tofu and pork
Rice Paper
Fresh Herbs and greens ( we used mint, cilantro, kale and cabbage)
Sauce ( nuoc cham or peanut sauce)
You can make these with just about anything, chicken, plain tofu or all veggies. Rice noodles are also really good inside.

Nuoc Cham
3 tbsp lime juice
2-4 tbsp sugar
1/2 cup water
2 1/2 tbsp fish sauce

Add lime juice, sugar and water until sugar is dissolved then add fish sauce. You can add chilis, garlic, shredded carrots. My favorite is ginger.

Peanut Sauce
1/2 cup water
4 tbsp peanut butter
4 tbsp hoisin sauce
Siracha if you want
Add all ingredients together til smooth.

Always with cooking you can adjust anything to your taste.

North Carolina Beauty

When people hear North Carolina they don't tend to picture beautiful beaches or ocean, atleast where I'm from originally, California. I just moved my family and I here and it is BEAUTIFUL! Here are just a few pictures I've captured.

                                  Emerald Isle is beautiful and a great place to vacation at. There are tons of great rentals right on the beach or if you prefer you could rent on the sound side where you could have a dock and a boat. Tons of restaurants and lots to do. Anything from fishing, crabbing, clamming,water parks, dining, yoga on the water, ferry rides or just lounging on the beach.

                               You can burn anything in your backyard and this is our big Bon Fire!
